Pastry Chef
Gianluca Fusto is an expert pastry chef with a creative, rigorous approach, known for his minimalist style and search for flavour. In 2008, he founded a consultancy and training business for the food sector, Gianluca Fusto Consulting, building on many years of work and study spent developing projects and ideas for important companies both in Italy and abroad.
His technique is based on an ideal combination: three elements, three textures, three structures, three temperatures and three colours. This firm principle evolved from ideas gathered during his travels, and also from his great love for art, from which he draws inspiration for the stylish geometric design of his exquisitely flavoured creations.
These unique creations can now be found at the beautiful Atelier Fusto Milano, a crucible of ideas founded in 2019 and where pastry making, art and image meet. It is not just a sales point or a restaurant, but a new kind of space, where you can give free rein to your imagination, learn, and enjoy a gourmet break.
He has had many achievements. In 2012 he joined the Italian Academy of Master Pastry Chefs, and won the award for Best Pastry Chef of the Year at the Identità Golose international chef congress. In 2014 he took part in the DE.Sign series broadcast on Sky ARTE, which dedicated a whole episode to Gianluca Fusto, calling him the Italian architect of pastry making.
In 2013 he brought out Percorsi, his first book for professionals in the field, and then Le Mie 24 Ore Dolci directed at a gourmet readership. This was followed by Crostate, a monograph that takes a new look at the classic Italian tart and by Mono, in which he sets out new ways of presenting single portions.
