Pastry ChefThis course by Stefano Laghi focuses on cake-making. Students will learn the general concepts and the different techniques for preparing bases and fillings, and will be given tips about presenting an attractive result. The course will also include useful advice about baking, decorating and storing cakes.

COURSE OBJECTIVES
Take a fresh look at cakes, making and presenting them in a new way, introduce some basic general concepts that students can use for creating a wide range of cakes after the course.

February 4th
- introduction to the chef’s approach and methods
- preparation of different cake bases and fillings
- explanation of the general concepts of cake making
- preparation and description of baking moulds
February 5th
- theoretical look at the shelf-life of cakes and how to extend it
- making cakes
- baking and decorating cakes
PROCEDURE
Lectures – teaching modules covering several lessons
Participants will watch the cakes being prepared and will have the opportunity to ask questions during the lessons.
